The true crown jewel of the region’s production — a sparkling wine like no other in the world.

What makes it unique is that it is made directly from grape must, a distinctive approach compared to the base wine fermentation used for most other sparkling wines.
This technique, known as the Martinotti Method, is named after the ingenious researcher from the Royal Oenological Station of Asti who perfected it at the end of the 19th century.
It offered a practical solution to the fragility of bottles encountered with the traditional method, introducing sparkling fermentation in large pressurised tanks, followed by a refrigeration phase.

Asti is an Italian excellence admired the world over — a prestigious and celebrated wine that perfectly aligns with today’s consumption trends thanks to its light character, with only 7% alcohol by volume.
Its natural sweetness makes it the ideal companion to cakes and pastries, a harmonious match that respects the palate and the principles of good taste, avoiding pairings with dry sparkling wines that would create a dissonant contrast.

The creation of Asti Spumante is a meticulous process that begins with the gentle pressing of the grapes using modern pneumatic presses — a delicate gesture aimed at extracting only the finest must. This must is then carefully clarified to remove all impurities. The clear, chilled must is transferred to large tanks and subjected to repeated tangential filtrations, a technique that preserves its purity while awaiting the next stage.

Alcoholic fermentation then begins, carefully temperature-controlled and initiated by the addition of selected yeasts.

The cellar master's craft lies in knowing exactly when to stop fermentation — the precise moment when the desired alcohol content and residual sugar level are reached. This allows for a range of styles, from Brut Nature to sweet. Fermentation is halted by rapidly cooling the wine mass, followed by the removal of the yeasts through centrifugation or filtration.

The spumante is then prepared for isobaric bottling and made sterile through a final cartridge filtration before being sealed in the bottle.
